Job Overview

The Service Food supervisor (SFS) is responsible for the daily fresh food production and its preparations in accordance with the recipes. Next to that, the SFS is responsible for the supervision of the presentation of food products as well as the overall operations of the service food kitchen.

Responsibilities

  • Work with the Commercial team in the development of recipes in order to maintain good nutritional value
  • Plans menu and food production based on the estimated number of customers daily
  • Cook food and oversees food preparation, portion sizes and the overall presentation of the service food
  • Taste cooked food by in order to ensure palatability and flavor conformity
  • Follow and enforces serving procedures
  • Ensure that customers are served properly and in a timely manner
  • Estimate food and beverage consumption in order to anticipate amounts to be purchased or requisitioned
  • Coordinate periodic inventory counts of food & beverages, kitchen utensils/equipment and supplies
  • Monitor movement reports to increase sales and margins, and to reduce labor costs
  • Visit the competition for price comparisons, product and merchandising ideas
  • Coordinate the launch of new items on the menu
  • Review and consults with Store Manager on weekly targets.
  • Oversee that hygiene standards are met in the service food department
  • Monitor compliance with health and fire regulations regarding food preparation and serving, and building maintenance
  • Greet customers in a prompt, friendly and courteous manner
  • Create and maintains a positive customer environment
  • Offes taste, samples, suggestions to customers
  • Report customer suggestions, comments, and complaints regarding food quality or service to store manager
  • Train, develops and supervises department staff
  • Engage the service food team to deliver operational excellence and strong teamwork through inspirational leadership
  • Organize and conducts regular Service Food team meetings to discuss performance, issues and changes with Service Food staff
  • Encourage and inspires the team to maximize sales and to achieve the other set goals and make suggestions to enhance performance and drive better results
  • Designate shift schedules of each employee based on the coverage needs of the kitchen
  • Create a positive and an empowering working environment resulting in team retention
  • Communicate the business and department objectives clearly to the team to ensure the team remains well informed about the department activities
  • Ensure the team is aware of the required contribution to the set objectives
  • Report on a professional and natural way to improve the business
  • Lead and attends meetings according to the meeting structure

Qualification

  • HND/BSC in Restaurant and hospitality management, food management or any food related course
  • Good experience in the food production and retail industry.

Required skills

  • Cooking skills and good knowledge of recipes and food matching
  • Knowledge of relevant food safety legislations and haccp rules
  • Good understanding of the meaning of food quality and freshness
  • Have high standards of cleanliness and the ability to adhere to strict hygiene rules
  • Should be an expert in food control and excellent attention to detail
  • Strong interpersonal abilities
  • Understands (local) customer tastes, behaviors and the effect on sales
  • Energy, drive and a strong can-do attitude (getting-it-done mentality)
  • A desire for continuous food improvement and professional development.
