Job Overview

The main responsibility of the Bakery Assistant (BA) is to give support to the Bakery Supervisor (BS) in bread and baked goods production and managing the operations of the bakery to maximize sales, profitability and customer satisfaction. The BA follows the laid down systems and procedures of the bakery department.

Responsibilities

  • Assist the Bakery Supervisor to determine the raw materials required at the bakery
  • Ensure raw materials for bakery are of good quality
  • Assist the Bakery Supervisor to prepare bakery items following the specifications given by the food technologist
  • Assist in the pre-bake preparation and its process by following the recipe book
  • Adhere to toppings and weight measures according to the recipe book
  • Follow production schedules and production sheets created by the Bakery Supervisor to ensure adequate supply and back stock of baked goods
  • Conduct daily bread checks
  • Use the machinery correctly and professionally and ensures the right techniques are applied (temperature, baking time, )
  • Participate in stock takings/periodic inventory counts
  • Assist Bakery Supervisor in estimating baked goods consumption in order to anticipate amounts to be ordered
  • Place orders to ensure uninterrupted supply after approval from the Bakery Supervisor
  • Work with the Bakery Supervisor to ensure a comprehensive bakery selection and special-order bakery menu
  • Assist with the launch of new bakery products
  • Assist in the setting up of special seasonal displays, demos and promotions within the bakery
  • Visits other stores for price comparisons, product and merchandising ideas
  • Work with the Bakery Supervisor to achieve weekly targets.
  • Clean the machinery and tools according to the HACCP rules
  • Maintain the bakery in a sanitary & orderly condition, following HACCP guidelines
  • Ensure that hygiene standards are met in the bakery department
  • Check regularly to ensure old and low quality items are pulled from coolers and retail displays, recorded, and properly disposed of following established procedures
  • Follow safety and storage procedures
  • Take care for a healthy and safe work environment in the bakery by proactively identifying and rectifying potential hazards
  • Greet and assists customers in a prompt, friendly and courteous manner
  • Offer tastes, samples, suggestions to customers
  • Report customer suggestions, comments, and complaints to the Bakery Supervisor
  • perform other tasks as assigned

Qualification

  • OND/HND, BSC in Food management, food science or any food related course
  • Good experience working in the food production or food retail industry, especially in the bakery department.

Required skills

  • Knowledge in preparing baked goods (breads, cakes, pastries, cookies )
  • Able to prepare baked goods in large quantities
  • Knowledge of relevant food safety legislations and haccp rules
  • Good understanding of the meaning of food quality and freshness
  • Have high standards of cleanliness and the ability to adhere to strict hygiene rules
  • Should be disciplined in food control and excellent attention to detail
  • Energy, drive and a strong can-do attitude (getting -it-done mentality)
  • A desire for continuous food improvement and professional development.
